lemon roasted chicken and choc vanilla muffins

for desert,i made chocolate vanilla muffins! just because i was kind of craving for something sweet.the muffins is just some basic muffins with chocolate toppings.the topping was actually some leftover of churros dipping that i made during the weekend.didn't want it to go to waste so i found the perfect use for it!the rest of the batch didn't have any topping since yours truly was being a complete lazybum to make new topping so these ones in the photo were the lucky ones that had toppings on them!



as i was browsing through nigella's website,i came across this lemon roasted chicken recipe.it looked nice and easy so i said,why not?just give a try and it did taste really good!!I really love Nigella Lawson as most of her cookings are simple and hassle-free!i kind tweaked the recipe according to what i had in my pantry.i couldn't be bothered to go and buy the fresh thymes so instead i just used some rubbed dried basil but still taste good nevertheless

Buttermilk cupcakes with swiss meringue buttercream

who doesn't love them?unless you're the type that counts every single calorie and sugar that goes into your body and claiming that it will make you fat!pfftttt.

i LOVE cupcakes!it's like happiness in little cups,topped with cute buttercream deco!

and so i made just a dozen of them since i just wanted to try this new cupcake mixture and it turned out to be really good!it's fluffy and soft and just nice!there's no "muak" feeling to this cupcakes cause it uses NO butter at all!yes,NO butter at all!well it's called buttermilk cupcakes.technically there is butter involved with the buttermilk.Buttermilk is the secret to this mixture!

well here's the recipe if you want to try them!

Buttermilk cupcakes(to make 12 medium sized cups)

1 Cup cake flour
1 sugar
1/2 cup buttermilk
1/2 cup vegetable oil
1 egg
2 tsp baking powder
pinch of salt
2 tsp of vanilla essence

steps:
mix sugar,buttermilk and oil together till combined.put the egg and mix the flour together with baking powder and salt.combine the dry ingredient with the buttermilk mixture(put the dry mixture bit by bit and mix it well so that it'll not lumpy) and lastly add the vanilla.Bake at 180c for 20-25mins!

As for the topping,i made swiss meringue buttercream.the texture is really nice and much better compared to the basic buttercream.swiss meringue gives the cupcakes the lustred-look.i got the recipe for martha stewart's website and here's the link to it :



intially,there were 12 of them but only four left!8 of them were eaten by the boyfriend each time i was done putting the buttercream.so only these four managed to survive his sweet tooth,YET!I couldn't really play around with the deco because my piping nozzles had something wrong with them.Getting new ones tomorrow at Spotlight!wheee
The fondant flower.My first attempt of making flower with fondants!and as you can see with the dotted food colouring,i just simply poured it over the petals because i was too lazy to knead the fondant and the colouring beforehand.

I shall make new batches again tomorrow!but i don't think i'll be uploading them because i'll be busy with my case study!

kuih bakar

I'm a HUGE fan of traditional kuihs!but being here,i can hardly taste them as it is quite hard to make them or to find the ingredients or it is just a lot of fuss along the process of making them!the easiest malay kuih to cook is Kuih Bakar.So i made it yesterday for Dayana's and Nicole's housewarming!

It is the easiest to make as you just chuck everything inside the blender and take less than 5mins of preparations!



The kuih was a bit cacat-ed because while waiting for it,i played L4D 2 and got caught up killing zombies,hence explaining the a bit burnt part of it.Being a kelatanese,this one was not sweet enough and not "lemak" enough.But then,my sweet level is wayyy above other people's!no wonder i always got sugar high!
